Protein Packed Cowboy Cookies
1/2 c peanut butter
1/4 c Greek yogurt
1/4 c coconut oil
2 eggs
1tsp vanilla
1/4 c sugar
1 scoop vanilla protein
1/2 c brown sugar
1 1/4 c flour
1 c oatmeal
1tsp soda
1tsp salt
1 tsp cinnamon
1 C sugar free choc chipsStir in first 5 ingredients, stir and add dry ingredients and chocolate chips. Roll into balls and bake at 375° for 10-12 minutes.
I substituted the butter and shortening with peanut butter, yogurt and coconut oil. Left out half the sugar and added protein powder. So it’s a little healthier and tasty!
