One I’d my very favorite cookies and I make them yeast round. I tweaked the recipe so that it has less sugar, better fats and more protein.
Pumpkin Chocolate Chip Cookies
1/2 C Coconut oil
1C pumpkin ( not pumpkin pie mix)
1/2C sweetener (sugar or sugar substitute)
1 scoop vanilla protein powder
2C flour (white, wheat, or almond)
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
1 C sugar free chocolate chipsMix together sugar, protein powder and pumpkin, add coconut oil, stir well. Add dry ingredients, then chocolate chips. Roll in a ball.
Bake 350° 10-12 minutes
